Every step, from the choice of raw ingredients to the packaging, is carried out following a natural balance, with respect for the traditional timeframes and phases necessary for quality production, in order to create excellence that arrives all the way at your table fully intact.
The milk used to produce our Piaceri Italiani Gorgonzola is collected daily from the best farms in the DOP area, and brought to the dairy, where a masterful, highly-skilled process begins.
Once it is cooled and stored, enzymes are added to the milk, prepared with natural cultures, selected penicilliums and calf’s rennet, followed by processing, performed by expert hands, and then ageing in cold rooms. The resting period lasts around 60-65 days for mild gorgonzola and 90-100 days for strong gorgonzola, during which it develops its typical blue mould. All phases, right up to packaging, have been perfected by state-of-the-art technology, for a level of safety that exceeds standards and a product with surprising characteristics.
