The distillation of grappa is an art, and there is just one secret to producing excellent grappas: a high-quality raw ingredient. In order to produce our Piaceri Italiani Grappas, only the best pomace is selected, provided by wineries that respect its sensory qualities and guarantee prompt delivery at our trusted distillery, which is the result of technological progress developed over four generations who have contributed to innovation with respect for the experience passed down. Because distillation is a true mission, a skill that continues to evolve, that cannot be learned in books, the fruit of a combination of tradition and experimentation.
The distilling process for our Piaceri Italiani Grappas begins at the end of August, at the same time as the grape harvest, and finishes in mid-October. The pomace is delivered to the Master Distiller and distilled in order to extract its aromatic essence: indeed, the grappa is brought to life by the distillation process, clear as water, but full of emotions. This is followed by a rest period in stainless steel tanks, or ageing, after which the grappa is ready to be diluted with pure water and then filtered. Before being bottled, a sample of the spirit is sent to the Institute for the Protection of Trentino Grappa, where it undergoes in-depth chemical and sensory analysis. This allows us to offer you a certified grappa with impeccable quality.
Fragrance and softness are the main characteristics of our Piaceri Italiani Grappa, delicate and fruity, with a lightly aromatic, pleasant aftertaste. To enjoy it at its best, pour it at room temperature, into small, clear tulip-shaped glasses, and sip it as a digestif, with a coffee or on its own. It is also interesting and original paired with fresh cheeses. You can choose between our Grappa di Prosecco Valdobbiadene, with its harmonious, dry structure, and its fragrant, floral perfume; our Piaceri Italiani Chardonnay Grappa, youthful and appealing, delicately perfumed, with notes of golden delicious apple; and our Grappa Stravecchia, made from the most prestigious grape varieties in Trentino, soft with a warm amber colour, with notes of vanilla, nuts, honey and cocoa.
