The choice of high-quality raw ingredients is the foundation of all our production, where the different phases alternate interventions from state-of-the-art machinery with procedures performed strictly by hand or by applying ancient methods. This way, the natural, typical properties of our different products are respected without compromising on quality and safety.
Piaceri Italiani Guanciale and Pork-fat, the art of charcuterie
Our Piaceri Italiani Guanciale with pepper is made with pork jowl exclusively of Italian origin, with added aromas such as garlic, black pepper and fennel. After trimming and salting, which are performed manually, the guanciale is left to rest in special tanks before being peppered and hung for ageing. Our Lardo d’Arnad DOP is made by processing only pork shoulder from pigs raised in the Aosta Valley, Piedmont, Lombardy, Emilia-Romagna and Veneto. The ageing, for at least three months, takes place in “doils”, ancient containers made from chestnut or oak wood. Inside these, the layers of pork-fat, piled up to fill the container, are alternated with a mix of salt, water, spices, natural flavours and aromatic mountain herbs. Our Piaceri Italiani Cured Guanciale Cubes, with a sweet, lightly spiced flavour, are made with Italian pork jowl, and are a product free of gluten, lactose and milk protein, with no added polyphosphates or glutamates, sold in a practical format for easy preparation of your favourite dishes.
